Our classic egg pasta dough rolled to the perfect thickness using the traditional method with a mattarello and a lot of practice. Hand cut into lucious wide ribbons, perfect with a ragu of beef and pork, or duck (even with Wild Boar if you’re feeling adventurous).

My family’s tried and tested method of preparing sauce en mass. A classic and simple red sauce of onions, garlic, parsley, basil and imported San Marzano Tomatoes DOP, slow cooked and packaged whilst steaming hot to preserve freshness. Perfect as is with our hand made pasta and some parmigiano and chilli or used as a base for a quick meat sauce, lasagna or cannelloni, you might even find your housemates drinking it with a spoon.
